Bacon, Lettuce, & Tomato Potato Salad Recipe


This is a great adaptation to a classic recipe.  Perfect for the guys, because bacon makes everything better.


Ingredients:

1 Vidalia Onion, chopped

1 lb. Bacon

1 Cup Sour Cream

2 Cup Mayonnaise

3 Tbsp. Milk

8 Red Potatoes

6 Eggs, hard boiled & chopped

2 1/2 Cup Lettuce, shredded

2 Tomatoes, chopped

2 Cups Cheddar Cheese, shredded


Ingredients:

Wash and boil the potatoes, until they’re tender, then let them cool.


Chop up the onions and bacon, and cook until the bacon is crispy.  Save the grease.


Combine the sour cream, mayonnaise, bacon grease, and the milk, in a small bowl.


Mix together the potatoes, eggs, and onion/bacon mixture, in a large bowl.


Add the potato and mayonnaise mixtures, and cover and refrigerate for 2 to 3 hours.


Add lettuce, tomatoes, and cheese to a serving bowl, and transfer the potato salad on top.
