Mediterranean Pasta Salad Recipe


This is a great pasta salad recipe, you prepare it the night before, and it’s ready to go!


Ingredients:

4 Cups Penne Pasta

12 oz. Sugar Snap Peas, frozen

3 Links (11 oz.) Sweet Italian Sausage

1/3 - 1/2 Cup Sun-Dried Tomatoes, julienne-cut

1/4 Cup Half-and-Half

2 - 3 tsp. Garlic, minced

3 Tbsp. Extra-Virgin Olive Oil

2 Tbsp. Tomato Sauce

2 Tbsp. Sour Cream

1 tsp. Oregano, dried

1 tsp. Basil, dried

Salt and Freshly Ground Pepper


Directions:

In a large saucepan, boil 5 qt. of water and 1/2 tsp. of salt.  Pour in the pasta, stirring occasionally, for about 12 minutes.  Add the snap peas, and continue to boil for 1 to 2 minutes.


Drain the pasta, and place in a large serving bowl.


While waiting on the pasta, brown the sausage in a frying pan, coated in cooking spray.  Let it cool, then add to the pasta and stir in the sun-dried tomatoes.


In a small food processor, add the half-and-half, garlic, olive oil, tomato sauce, sour cream, oregano, basil, salt, and pepper and puree briefly.  Pour over the pasta mixture, and stir to blend together.  Refrigerate until time to serve.
