Onion Dip Recipe


This is a great, fresh onion dip.  So much better than anything you’d pick up at the store.


Ingredients:

1 Tbsp. Olive Oil

1 large Onion, sliced

1 Leek

3 Garlic Cloves

Pinch Salt

12 oz. soft firm tofu, drained

1 Tbsp. Balsamic Vinegar

1 tsp. Soy Sauce

1 tsp. Lemon Juice

Fresh Ground Black Pepper, to taste


Directions:

Prepare the onion, by peeling and cutting it in half, then thinly slice the onion.  Cut the white parts of the garlic and leek.


In a skillet, over medium heat, add the olive oil, onions, garlic, and leeks.  Sprinkle with salt.  Let cook for 10 minutes, stirring to keep it from sticking, until the onions are brown and caramelized.


In a food processor, add the onion mixture, and pulse 3 times, then add the vinegar, tofu, soy sauce, lemon juice, and pepper, blending until it’s smooth.


Refrigerate over night.  Great with veggies or chips!
